Why Do We Use Salt And Pepper?

Salt and Pepper ShakersWalk into just about any restaurant and you are going to see them sitting on the table, good ole salt and pepper. 

But why? Why do we use salt and pepper to spice our foods? Why not salt and coriander, or salt and paprika instead? 

Salt is something that the human body needs to survive, so it is not so surprising to see it hanging out in kitchens and on tables. Pepper, on the other hand, is not required to survive so why is it so special?
